The new reports, covering 78 countries across Africa including Kenya, Tanzania, Uganda, Rwanda, and Zambia, signal that African consumers are moving beyond traditional staple flavours, seeking greater complexity, specific, more variety, and “cocktail-inspired” experiences in their everyday food and beverages.
The 2026 Taste Charts are powered by an extensive multidisciplinary team of over 1,200 scientists, 100 flavourists, 70 food craft experts, and 250+ marketing and insights voices.
As consumer expectations continue to fragment and intensify, the 2026 Taste Charts expand from five to seven categories in the region, covering Refreshing Beverages, Alcohol & Alcohol-Inspired Drinks, Tea, Coffee & Cocoa, Savoury Snacks, Sweet Treats, Soups and Dressing, Meat and Meals and supplements. This broader view captures the growing crossover between indulgence and wellness, tradition and novelty, and global inspiration and local identity that are increasingly shaping flavour decisions.

Hydration with Character: A Shift to Specificity Refreshing fruits continue to dominate beverage innovation, but the demand for “flavour fidelity” is rising. While traditional citrus profiles like Orange and Lemon remain volume drivers, the charts reveal a demand for more specific and sophisticated varietals. In Rwanda, Uganda, and Zambia, “Tangerine” has surged to become the number one fastest-growing refreshing beverage flavour, aligning with a global demand for vibrant, naturally sweet thirst quenchers. Meanwhile, Tanzania is embracing indigenous pride, with “Tamarind” (Ukwaju) named the top emerging flavour, signaling a return to bold, tart, local roots.

Sweet Meets Heat: The Rise of “Swicy” Sweet and spicy flavour pairings are gaining ground as consumers look for intensity, contrast and shareable experiences. This trend is most visible in Kenya, where “Swicy” innovations are leading the charge in alcohol-inspired beverages with pairings like “Mango Chilli.” Across the wider region, this appetite for complex heat is evident in savoury snacks, where simple spice is evolving into layered seasoning systems.
Beyond Burn: Layered Heat, Global meets Local Consumers are moving away from one-note spiciness toward more nuanced heat. Across Greater Africa, paprika-led blends are gaining momentum in snacks, sauces, grilled meats and ready meals, offering smoky, sweet and aromatic complexity inspired by street food traditions. This shift supports richer seasoning systems that deliver depth rather than intensity alone. In Tanzania and Kenya, this evolution is further mirrored in the snack aisle, where “Salted Caramel” has bridged the gap between savoury and sweet to offer a decadent, multi-sensory experience.
The “Mocktail” Effect: Alcohol Profiles in Everyday Drinks A major trend sweeping the region is the crossover of alcohol-inspired flavours into non-alcoholic refreshing beverages. Consumers are seeking the sophistication of cocktail culture without the alcohol. The “Mojito” profile (Lime and Mint) is now a top three emerging flavour in both Tanzania and Rwanda. Similarly, “Piña Colada” has entered the top five fastest growing flavours in Uganda and Zambia, signaling a desire for creamy, tropical escapism in everyday formats.
